Fancy double chocolate cookies


I mean, I’m 7 months pregnant. What did you expect me to make?
I’ve been addicted to anything sweet and chocolatey these past few weeks and as soon as I saw Cupcake Jemma’s video on YouTube, I was instantly inspired to create a vegan version of these bad boys.

These double chocolate cookies aren’t your regular chocolate cookies. They’re top with (drumroll please),… caramelised white chocolate. Yeah, you read that right.
Now I’ll be totally honest with you here, the caramelised chocolate does take some preparation thus extra time. But in my humble opinion, it’s totally worth it.
I’ll explain how to make these cookies and how to caramelise your chocolate in the recipe below. Enjoy & indulge!


(for the cookies)
125 gr. soft unsalted plant based margarine
200 gr. white sugar
2 flax “eggs”
7 tbsps plant based milk
175 gr. wheat flour
75 gr. fair trade cacao powder
½ tsp baking soda
pinch of sea salt

(for the caramelised chocolate)
250 gr. of high quality vegan white chocolate

(for the caramelised chocolate)
1. Chop up your chocolate and spread evenly in a baking tray
2. Pop in your preheated 100 degrees Celsius oven for about 10 minutes
3. Now stir the semi-melted chocolate in the baking tray and spread evenly again. Now pop it back into the oven for another 10 minutes.
4. Repeat this step (wait 10 minutes, stir, back in oven) until your chocolate has reached a caramel-tan colour. It took me about 30-40 minutes in total.

(for the cookies)
1. Preheat your oven to 175 degrees Celsius.
2. Start off by mixing your margarine and sugar with your mixer or hand mixer for about 5 minutes, until fully incorporated.
3. Now add your flax eggs and 3 tbsps of plant based milk & mix.
4. Now sift in your dry ingredients and 4 remaining tbsps of milk & mix well. You’ll end up with a soft dough.
5. Line a baking tray with parchment paper and form little dough balls with your hands and place these on your parchment paper with plenty of space in between.
6. Top the balls off with about 1-2 tsps of melted caramelised chocolate.
7. Pop your cookies-to-be in your preheated oven and allow them to bake for 10-15 minutes.
8. The cookies will be really soft when you take them out of the oven, so allow them to cool for about 5 minutes before carefully transferring them to a cooling rack.
